Jam Tarts



  1. Place the flour & sugar in a large bowl and mix together.
  2. Cut the butter into small pieces and toss in the flour.
  3. Using your fingertips, lightly rub the butter into the flour to form fine breadcrumbs.
  4. Add the egg yolk and mix with a knife. Add a little water (if needed) to bring together to a dough.
  5. Place in a bag or cling film and refrigerate for half an hour.
  6. Preheat the oven to 190°C/ gas mark 5.
  7. Roll the pastry out to the thickness of a pound coin. Using a 6 ½ cm round cutter, cut out circles. Put one in each hole of a bun tin.
  8. Into each circle, spoon a couple of heaped teaspoons of jam. If you have any pastry left, cut out some shapes such as hearts and place on top of the jam.
  9. Bake in the oven for 15-20 mins, until the pastry is golden brown.
  10. Cool on a wire rack.
  11. Store in an airtight container in a cool dry place.
