Elderflower Cordial



  1. In a saucepan, gently bring the water and sugar to the boil, stirring until the sugar is dissolved.
  2. Place the elderflowers in a bowl and pour the sugar mixture over them. Stir in the vinegar, lemon juice and zest before covering. Leave to infuse for 24 hours.
  3. Sterilise some glass bottles or jars by washing well and then rinsing with boiling hot water.
  4. Leave to drain before heating in an oven at 160°C / gas mark 3 for 10 mins or until thoroughly dry.
  5. Strain the liquid through muslin and bottle into the sterilised jars or bottles.

The cordial will keep for a few months in the fridge.

To drink: dilute about 1 part cordial to 10 parts water but depends on individual tastes
