Banana Cake



  1. Preheat the oven to 160°C / gas mark 3. Grease a 1lb loaf tin and line with greaseproof paper or use a loaf tin liner instead.
  2. In a bowl place the butter and sugar. Microwave on high until melted, checking every 30 seconds and stirring if necessary. Leave to cool.
  3. Mash the banana with the vanilla extract.
  4. Stir the banana and egg into the melted mixture.
  5. Add the flour, bicarbonate of soda & cinnamon and mix well.
  6. Pour into the tin and bake in the oven for approx. 45-60 mins, until golden brown and when a skewer is inserted into the centre of the cake it comes out clean (with no raw cake mixture on it).
  7. Cool on a wire rack. Store in an airtight container.
