Apple and Quince Pie



  1. To Make the Pastry
  2. Place the flour, butter, icing sugar and zest in a magimix. Blend until the mixture resembles fine bread crumbs (this can also be done by hand using the rubbing in method).
  3. Add the egg yolk and mix until just coming together.
  4. Form a ball and place in the fridge for half an hour.
  5. Pre-heat the oven to 190°C/Gas Mark 5.
  6. In a bowl toss together the fruit, caster sugar and all spice.
  7. Place in a 9 inch/23 cm round dish or pie tin.
  8. Bake in the oven for 10 minutes to part cook the fruit and remove.
  9. Roll out the pastry to pound coin thickness and place over the top of the fruit. Cut round the outside of the dish to remove any excess. Make a small hole in top to allow the steam to escape.
  10. Bake for 20-25 minutes until golden brown.
  11. Serve warm or hot with cream or custard.
