Apple & Blackberry Crumble

Crumble Topping

Fruit Mixture

Method

  1. Rub the flour and butter together until it resembles breadcrumbs. Stir in the sugar and polenta.
  2. Place the mixture on a large baking tray and chill for an hour in the fridge.
  3. After chilling, preheat the oven to 180?c / gas mark 4 and cook until golden brown (approx 15-20 mins) turning the crumble over occasionally so it cooks evenly.
  4. Place all the ingredients for the fruit mixture in a saucepan. Cover and simmer on a low to medium heat until the fruit is tender (approx 8-12 mins). This can also be done in the microwave if you prefer.
  5. Drain off any excess fluid. Add more sugar if needed before dividing between 4 small dishes.
  6. Sprinkle the crumble mixture over the top and serve.
  7. If there is any spare crumble mix this can be stored in an airtight container for next time.
